A 4K streaming stick on a 1080p TV, or on a slow connection, never actually streams in 4K. Check both before paying extra for the higher-end model.
Voice search, TV power and volume control, and a headphone jack on the remote are the differences you feel every day. The chipset inside two similarly priced sticks is often closer than the remote is.
The upgrade matters most when several devices are streaming on the same network at once. A single TV on its own connection rarely needs it.
A device with very little onboard storage can get slow to switch between apps as updates accumulate. It does not affect how the video itself looks.
